An agronomist (AgroParisTech) and former senior consultant at Deloitte Sustainability, I have supported multinational companies in the agri-food, catering, and retail sectors with their sustainable strategies: structuring sustainable procurement specifications for cereals, fruits and vegetables, and beef; building regenerative agriculture strategies; deploying internal transformation plans to translate public decarbonization commitments into operational objectives.

What struck me throughout these missions: the upstream and downstream of food chains communicate too little. Producers often don't know what happens to their products. Downstream players lack data on their supplies. And consumers eat without really knowing what they are eating. But this is not inevitable; all players in the food chains want more exchange, for impact and resilience reasons.

This is how Satou was born, a transparency standard for independent restaurants. An experience that complements my years of consulting: bringing a solution to life with field players, in an under-structured ecosystem.

Today, I work with agri-food SMEs and ETIs on three types of missions:

— Sustainable procurement policies: translating CSR commitments into operational specifications, by sector and by product range.

— Sectoral sustainable strategies: regenerative agriculture, low-carbon transition, supplier engagement.

— Internal deployment: defining responsibilities, indicators, and roadmaps to ensure public commitments are materialized within the organization.
