- Supervise, train, and coordinate production teams to ensure performance objectives are met.

- Optimize production scheduling to ensure needs are met and maintain an appropriate level of finished product inventory, while planning daily work and efficiently allocating resources (personnel, machinery, raw materials) within the given timeframe.

- Monitor performance indicators (yield, rejection rate, productivity) and adjust processes to maximize efficiency and achieve set objectives.

- Oversee weighing, kneading, sheeting, shaping, fermentation, deep-freezing, and packaging operations to ensure product quality and consistency at each stage.

- Ensure products comply with current quality and food safety standards, collaborating with the Quality Department and the Center of Expertise to implement corrective actions if necessary.

- Supervise first-level maintenance and collaborate with technical teams to minimize production downtime due to breakdowns.

- Ensure the availability of raw materials (flour, butter, yeast, etc.) and packaging (rolls, plastics, cartons, etc.) necessary for production, in coordination with the logistics department.

- Identify and propose improvement actions to optimize production processes, reduce costs, and enhance productivity.

- Participate in the development and innovation of new products, collaborating with the Research, Innovation, and Development department to integrate new recipes, manufacturing methods, or technologies.

- Ensure compliance with workplace safety standards and food safety regulations.

- Participate in management reviews to analyze section performance (efficiency, loss rate, productivity) and implement corrective actions.

- Ensure adherence to the production schedule.

- Manage human resources by assigning employees to appropriate positions, mentoring staff, and overseeing operations to ensure a high-performing workforce.

- Ensure compliance with sanitary and food safety regulations at each stage of the production process.

- Manage inventory and monitor stock levels of raw materials and ingredients to prevent shortages, avoid unexpected shutdowns, comply with raw material information sheets (FIFO), and prevent shortages or waste.

- Optimize operations by identifying bottlenecks and inefficiencies within the production chain.

- Collaborate with the logistics, R&D, and quality departments to ensure smooth communication and effective coordination.

- Operate the process to supply the packaging department with the appropriate blend, quantitatively and qualitatively, while adhering to standards.

- Perform physico-chemical controls (pH, EST, ESD, viscosity), and rheological controls.

- Ensure the operation of the premix cooker and validate pH and dry extract analyses in parallel with production for conformity and quality, and the quantity of ingredients before starting the cooking process in the cooker.

- Ensure proper sanitation of equipment and the environment by carrying out defined operations and adequate controls (UHT, white water tanks, floors, walls, etc.).

- Ensure the CIP (Clean-In-Place) of installations with respect to TACT (Time, Action, Concentration, Temperature).

- Collaborate with departments associated with production teams, particularly packaging, maintenance, shipping, and quality.
