Nicolas Cascales

Founder of Yaoz since 2017, I develop a restaurant concept specializing in crepes, waffles, bubble tea, frozen yogurt, and coffee shop.

Over the years, I have opened and supported more than 15 locations in France and internationally, managing all stages of a project: site search, commercial lease negotiation, store design, construction, purchasing, recruitment, launch, and development.

Today, I also support entrepreneurs looking to create or develop their own restaurant concept by sharing experience gained entirely in the field.

I work on both strategy and operations, with a simple goal: to help project leaders limit mistakes, save time, and build a profitable restaurant on solid foundations.

Before creating Yaoz, I held executive management positions within the French Army, responsible for catering and accommodation facilities serving up to 120 people per day.

This experience allowed me to develop solid expertise in management, organization, logistics, operational management, and team leadership in demanding environments.

I acquired a work method based on rigor, anticipation, priority management, and decision-making, skills that I now apply to the development of restaurant projects and supporting entrepreneurs.
