My name is Manon, and I have had a passion for the restaurant industry for over fifteen years. What drives me is this subtle alchemy between rigor, generosity, and emotion.
My journey has taken me around the world, from Australia to Courchevel, from the neighborhood coffee shop to the historic palace hotel.
These years of experience have taught me that an establishment, whatever it may be, rests on the same foundations: a clear vision, a united team, and a sincere customer experience.
In France, I had the privilege of collaborating with some of the finest establishments; the Hôtel du Palais in Biarritz, Palace. The Beau-Rivage Palace in Lausanne, the Four Seasons Saint-Jean-Cap-Ferrat, and ONA*, the first vegan restaurant in the world to receive a Michelin star, where I rediscovered the profound meaning of creativity and commitment.
These experiences have allowed me to develop a 360° vision of the profession. I learned to manage teams with diverse profiles, to oversee multiple points of sale simultaneously, to support concept openings, and above all, to understand the importance of people in performance.
Today, I support hoteliers, restaurateurs, and coffee shops who wish to give a new impetus to their business: restructuring their organization, redefining their identity, streamlining their operations, and enriching the customer experience.
