Responsibilities: Creation and presidency of the Bellagio holding company. Administrative structuring and unified reporting (KPIs). Centralized HR management and coordination of delegated management. Supervision of production, schedules, and kitchen/dining room logistics. Implementation of service standards: reception, plating, payment, hygiene. Achievements: Return to profitability within 2 years (+35% cumulative revenue). Cost reduction through centralization of support functions. Deployment of internal procedures and effective management tools.

Context: Creation of a delivery transport structure initially intended to solve the profitability issues of Mediasat & Music2B's internal logistics. Development of a shared service offering for other professionals. Responsibilities: Obtaining a light transport license (exam passed), business development, route planning, customer relations, administrative management. Achievements: Successful outsourcing of Mediasat delivery service. 3 to 4 regular clients financing all fixed costs. Delegation of all tonnage transport to an employee holding an appropriate license.

Context: Company creation in 2004, followed by the acquisition of a competitor going out of business, holding a strategic commercial lease. Expansion in 2016 with a new partner and opening of a second store over 500 m². In 2023, company safeguard procedure, negotiation with the Ubaldi brand for the purchase of goodwill, stock, and the rehiring of some employees. Responsibilities: Full management, operation of the two points of sale, supplier negotiation, stock monitoring, local marketing, financial steering. Achievements: Annual revenue exceeding €2 million at its peak. Integration into the Pulsat GIE (480 stores in France). Partial resale of assets before collective judicial liquidation.
