The entry point is the Purchasing department, which always represents budgets of 50% to 80% of turnover. By knowing its expenses perfectly and optimizing them, we can together remove the cost barrier and combine triple performance: economic, social-societal, and environmental.

Utilize the Climate Fresk to initiate a responsible purchasing approach and integrate it into the CSR strategy.

Initiated the purchasing of Seafood products in the largest branch of the division, Terre Azur Restauration (Sourcing, Purchasing, Procurement & Supply Chain). Established the collective catering seafood activity in the new warehouse and brought seafood product expertise to this Ile-de-France branch, which was initially exclusively focused on Fruits and Vegetables. Results: successful implementation in a challenging Covid context. Delivered volumes at the end of 2021 similar to pre-Covid levels, with the added preparation for Egalim, doubling sustainable fishing products (MSC) and "local/national" products (Pavillon France).
