About Benoit

From a young age, my journey has been built on the ground, through transmission and hands-on work. I grew up in a family and transgenerational kitchen, guided by my grandmother Solange, my mother, Mrs. Gardillou, and professional women who instilled in me a taste for the right move, respecting ingredients, and doing a job well done.

At 14, I started working with my father on the family farm in Dordogne, which grew from about 350 to 800 hectares through rigor, hard work, technology, and a self-taught approach. This rural foundation taught me effort, adaptation, anticipation, and the value of tangible results.

Later trained at the Institut Paul Bocuse, I continued my path in the hotel and restaurant industry, working in characterful establishments and fine dining restaurants, with a constant desire to transmit, simplify, and make things accessible. My job has never been just about "cooking": it's about guiding, organizing, reassuring, and creating human value.

My journey has been enriched by other experiences: private security, scuba diving, personal discipline, mindset, stress management, observation, protection, methodology, and composure. These different worlds have given me a multi-professional vision: quickly understanding a situation, structuring priorities, securing actions, and proposing useful solutions.

Today, I am at a crossroads. I combine my field experience, culinary expertise, safety culture, adaptability, and my current training in artificial intelligence, no-code, and automation with Alegria Academy.
